How come Aluminum in the pretzel?

In keeping with the Oktoberfest, a large number of pretzels, pretzel rolls, pretzel sticks, etc. are eaten again. During production, the pretzels are dipped in caustic soda before baking. This results in the transfer of aluminum salts into the lye depositack.

In our video you can see how aluminum (on baking trays) reacts with the caustic soda and the aluminum salts get into the pretzel. The remedy – our coating Rhenoback III reliably prevents the transition from aluminum salts to lye pastries. This was also confirmed by a test by an independent testing laboratory.
